This pizza is a family favourite and our son really enjoys making it for the us at the weekend, instead of a take away. Its also a really great way for everyone to get together in the kitchen picking toppings and decorating their pizza.
Makes three 12 inch pizzas
Ingredients:
Dough:
250ml luke warm water
14g dry yeast
½ tsp BOYLES IRISH PANTRY SUMMER HONEY Shop
440g strong flour
1 tsp salt (or to taste)
2 tbsp olive oil
Sauce:
500g tomato passata
1 tsp oregano
½ tsp garlic powder
Salt to taste
Oil for crust:
80 ml olive oil
1 tbsp nigella seeds
Toppings:
Use any toppings you wish, for that authentic feel we use mozzarella and fresh basil leaves

Method:
1. Pour the water into a bowl, mix in the honey and sprinkle the yeast on top. Leave for 5 minutes.
2. Put the flour and salt in a mixing bowl. Add the olive oil and mix on a low speed, add the yeast, honey and water mixture and mix until it comes together. Don’t be worried if the dough is sticky, form it into a rough ball and leave it in an olive oil coated bowl covered with olive oil covered cling film (in order to stop the dough sticking). Leave in a warm spot for about an hour to rise.
3. During this time, preheat your oven to 250°C, prepare your three pizza trays by oiling and sprinkling them with flour.
4. Divide the dough into three even parts and try rolling it into three equal 12 inch circles to sit onto your trays, perfection is totally unnecessary! Cover with oiled cling film and kitchen towels and again rest for 30 minutes.
5. While they are resting, prepare your toppings and make your sauce and oil. To make the sauce, simmer tomato passata gently with oregano, garlic and salt to reduce it slightly. For the oil mix in the nigella seeds and put to the side.
6. After 30 minutes brush the rims of each pizza with the oil and spoon on the tomato sauce leaving a small circle in the middle of each pizza sauce-less (this stops it from going soggy).
7. Add your toppings and get your pizzas into the preheated oven for 7 minutes, ovens vary so check if the underside of the pizzas is cooked thoroughly, if it’s still soggy and looks undercooked leave in the oven for another minute or so. Remove when golden and cool for a couple minutes. Drizzle with honey, slice and enjoy.
