Honey Pancakes

I love this recipe, it’s quick and simple and very delicious. I use a food processor to combine the ingredients, but you can just as well mix it by hand in a bowl with a wooden spoon.

250g flour

½  tsp salt 

2 tsp baking powder

2 eggs

60g melted unsalted butter

250ml milk

3 tbsp BOYLES IRISH PANTRY summer honey Shop

  1. Sift all dry ingredients together: flour, salt, baking powder
  2. If mixing by hand make a well in the centre, add the eggs, butter and milk and mix with a wooden spoon until smooth (add milk ⅓ at a time). Same applies if using a food processor.
  3. Add the honey, mix till all ingredients are combined and there are no lumps. 
  4. Fry on medium heat on a lightly oiled pan, approx. ¼ cup batter per pancake, for 2-3 minutes until you see small bubbles appear and the edges begin to dry. Flip and cook on the other side until golden. Repeat with remaining batter.
  5. Enjoy with your favourite toppings, for example: berry coulis, compotes, bananas, fresh fruit or whatever else tickles your fancy.
