Honey Pancakes
I love this recipe, it’s quick and simple and very delicious. I use a food processor to combine the ingredients, but you can just as well mix it by hand in a bowl with a wooden spoon.
250g flour
½ tsp salt
2 tsp baking powder
2 eggs
60g melted unsalted butter
250ml milk

- Sift all dry ingredients together: flour, salt, baking powder
- If mixing by hand make a well in the centre, add the eggs, butter and milk and mix with a wooden spoon until smooth (add milk ⅓ at a time). Same applies if using a food processor.
- Add the honey, mix till all ingredients are combined and there are no lumps.
- Fry on medium heat on a lightly oiled pan, approx. ¼ cup batter per pancake, for 2-3 minutes until you see small bubbles appear and the edges begin to dry. Flip and cook on the other side until golden. Repeat with remaining batter.
- Enjoy with your favourite toppings, for example: berry coulis, compotes, bananas, fresh fruit or whatever else tickles your fancy.
